Begun kofta curry








Ingredients



1 eggplant,begun
1tbsp chopped green chili
2 tbsp chopped onion
1/4 TSP turmeric
1/4 cup besan
1/2 TSP salt
1 medium potato
2 tbsp oil
1/4 cup chopped onion
1 TSP ginger garlic paste
1/2 TSP red chilli powder
1/2 turmeric powder
1 TSP coriander powder
1/2 TSP roasted cumin powder
1 medium Tomato
1/2 TSP salt
1 tsp fresh coriander leaves



Preparation

Get food experiment



Coat the whole begun with oil
Grill the begun
Remove the skin and transfer a begun in the bowl
Mash the begun
Mix in green chili, onion and besan
Make a small ball of the mixture and drop it in hot oil
Deep fry until golden brown on medium heat
Deep fry the dry potato until brown
Drizzle cooking oil in a pan and add chopped onion ginger garlic paste and splash water
Add red chilli, coriander turmeric roasted cumin, tomato and salt to taste
Add the fried potato and splash of water
Fry for 2-3 minutes
Cover the lid and cook for 2 minutes
After 2 minutes remove the lid and add fried begun


Garnish with fresh coriander
